Rich, I must say your view of TX is not very accurate, but a pretty typical one among Californians.

I don't know where your rentals are, but first of all, more than half of the people I come across in Dallas (and Austin), including our tenants, aren't originally from TX. Especially with the local economy being strong, people continue to move here from other parts of the country. (I'd say 1/4-1/3 of calls we get from our rentals come from those relocating from out of state.)

If your wife lived in Dallas or Houston (or even in Austin), she wouldn't look that different. Do you know Houston has the 3rd largest Vietnamese population after LA and SF in the US? And Dallas has the 4th?

I lived near Little Saigon before I moved from OC to Dallas 3 yrs ago. The Vietnamese food here is pretty good :-) (I'm a foodie.)

Dallas has a pretty large Chinese population, too (more Taiwanese and Mainland Chinese than HKers). Over the last few years, there has been a huge influx of Chinese from CA and other parts of the country. (I personally know more than a dozen Chinese RE investors who moved from CA.)

Some streets of Frisco and Plano were full of CA license plates with Chinese owners at one point. (All my Chinese friends live in Plano.) In fact, Plano is becoming like Irvine. The libraries in Plano are full of Chinese and Indians, reminding me of the libraries in Irvine.

Thanks to the increasing number of Chinese, the quality of Chinese food has improved here, with new more authentic restaurants over the last couple of years. If you ever come to Dallas, I can take you to a pretty good dim sum, Cantonese, Shanghainese, Taiwanese or Sichuanese restaurant :-) (I've eaten Chinese in HK, Shanghai, Taiwan, Vancouver, SF, SGV, LA and Chinatown in other major cities.)

Also, there's a Koreatown in Dallas (and KE has a direct flight from DFW to Seoul.) I was in Seoul last month and based on what I ate there, the Korean food here is pretty good! (though my Korean hairdresser doesn't agree with me. She moved from LA Koreantown a few yrs ago.) The mega Korean grocery food chain, H-Mart, just opened in Carrollton.

Also, until I moved here, I didn't know there were such large Indian and Middle Eastern populations in Dallas (with decent Indian and Arabic food, but not Persian).

BTW, I'm an Asian myself. Really, Texas is a lot more racially/ethnically diverse than you think and I thought (and food better :-)
